SUPER NUTRITION WITH SUPERFOODS: SUPERFOOD POPCORN

My whole family loves superfood popcorn. It is one of our favorite snacks!

HOLIDAY RAW CHOCOLATE TRUFFLES

Equal parts Cacao Butter and Coconut Oil melted over low heat and transferred to a wooden bowl. Stir the following ingredients in with a wooden spoon:

I recommend that you start with a small batch and get it just the way you like it. Then make a big batch!

Cacao Powder (add approximately equal parts of the Cacao Powder to the melted Cacao Butter and Coconut Oil)

Then add:
Raw Ground Vanilla to taste (start with a pinch)
Himalayan Sea Salt to taste (start with a pinch)
Jerusalem Artichoke Syrup and Inulin Powder to desired sweetness

Spice options: Black Pepper; Cardamom; Nutmeg; Cinnamon; Cayenne Pepper

Next: add desired amounts of these amazing superfoods (optional):
Raw Maca Powder
Raw Acai Powder
Cordyceps Mushrooms
Ground Raw Almonds
Ground Goji Berries (a coffee grinder works very well)
Ground Golden Berries (for tartness)
Cacao Nibs

Stir the mixture until it is just firm enough to roll into balls and then coat in cacao powder. Place on a plate and chill for two hours or so before serving. Enjoy!

STELLA'S RAW GRANOLA RECIPE

Serving size: 2-4 people

1 or 2 organic apples diced into small cubes

¼ cup sprouted sunflower seeds (soaked overnight)

½ cup shredded organic dried coconut

¼ cup sprouted almonds (soaked overnight)

½ tsp of Himalayan Sea Salt

¼ tsp cinnamon

¼ tsp cardamom

¼ tsp nutmeg

1/8 cup of raisins

1/8 cup of Goji Berries

1 teaspoon Chia Seeds

1/8 cup Jerusalem Artichoke Syrup

Put all ingredients into a bowl and toss them together until well coated with the Artichoke Syrup. Enjoy!

You can use ALL of the ingredients dry (not soaked/sprouted); however, it will be easier to digest and your body will utilize and absorb much more of the nutrients from the soaked seeds and nuts.

RAW SUPERFOOD PORRIDGE

Place all of these ingredients into a blender or Vitamix in this order:

2 teaspoons raw solid cacao butter cut into small chunks

¼ cup raw, organic whole almonds

¼ cup raw organic Goji Berries (dried)

5 or more Inca berries (depending on how tart you like things)

½ cup organic rolled oats or barley

¼ cup organic coconut flakes

1 Tablespoon Jerulselum Artichoke Powder (Inulin)

1 Tbsp Chia Seeds

¼ teaspoon Chef’s Grade Vanilla

pinch of Himalayan Sea Salt

(optional) dash of cinnamon and nutmeg

Blend at low to medium until coarsely ground.

Place this mixture into serving bowl.

Add 1 cup hot water, stir and let stand for 2 minutes.

(OR you can soak the ingredients overnight and enjoy this ready to eat breakfast in the morning)

You can also put the powder into a jar for easy traveling, or backpacking…

Optional: add fresh fruit or berries on top.

Enjoy this highly nutritious meal for breakfast or on the go! You will be satisfied for hours.
