RAW SHREDDED COCONUT BALLS


This recipe was created by Tiara Thomas, raw food chef from Napa, California.  Thank you Tiara for all of your wonderful contributions!  These are chewy and delicious for an anytime raw, healthy snack:-)

2 cups shredded coconut
1/4 cup jerusalem artichoke syrup
1/4 cup coconut oil
1 Tbsp cocao butter (optional, you can add more coconut oil instead)
3 Tbsp cacao powder
Handful of goji berries
Handful of cacao nibs

Heat coconut oil and butter in a double boiler or in a pan over low heat until liquid. Mix all ingredients together and form into small balls. Place in refridgerator until hardened.
