SUPER SNACK



SUPER SNACK
Raw Oatmeal Raisin Bars

Bend in the food processor until crumbly:
¼ cup Goji Berries
¼ cup Golden Berries (Inca Berries)
1 Cup Raisins
1 Tb Raw Ground Vanilla
2 tsp Himalayan Sea
1 Tb Cinnamon








Pulse until just mixed after adding:
1 Cup Raw walnuts
1 Cup Shredded Coconut
½ Cup Cacao Nibs
4 Cups Rolled Oats or Barley

Melt at a low temperature using a double boiler:
One cup Coconut Oil
One cup Cacao Butter

Add the melted fats and:
One ½-1 cup Jerusalem Artichoke Syrup (to taste)

Pulse until the mixture is moist enough to stick together.



Firmly press the mixture into a cookie sheet and refrigerate for 1-2 hours.  Cut into bars with a metal spatula and serve!
